Dal is an Indian style dish made from available ingredients that typically include lentils or beans. This recipe is great for July to combine legumes (peas & lentils) and grains (rice) to make a complete protein. Plus, in-season produce!

Pros:

· Large portions & storage tips
Cons:
· Timely; average time to make a main or side recipe is 42 minutes
(this recipe is one of the speedier ones, though!)
· Prep required on many dishes; requires planning ahead (which may not be a con for all types of cooks)

Tomatoes
· Lycopene - An antioxidant known for improving sun damage and skin benefits. Great Summer Nutrition!
· Look for deep red and smaller for the highest content of lycopene
· Eat with fat for improved absorption
· Use the seeds and skins as much as possible
Broccoli
· Rich in glucosinolates and antioxidants for disease defense
· Pick the darkest green or purple bunches with no signs of yellowing, tightly closed buds, and firm, smooth-cut stems
· While raw is best, cooking in oil or steaming can help retain the nutrients
Peas
· High in fiber and protein
· Look for multi-color and still in pods
· Eat with grains
